Ten years ago I had this dream of someday opening an Italian restaurant called TREVI.
Based on my unforgettable experience traveling to Rome, the restaurant would have a large classical fountain on its facade, where patrons could toss coins and make wishes.
Tables would be available al fresco, so people could enjoy the romantic facade. But the interiors would be one level grander than out: A smaller-scale replica of the actual Trevi fountain in Rome would occupy the air-conditioned atrium; it’s also out of bounds so everyone can enjoy the view from their tables. Limestone columns surround the restaurant, with a glass-capped oculus hovering above the indoor fountain.
Obviously the menu is composed of traditional Italian dishes, with panini served for free. A string quintet plays classical renditions of pop music ala Bridgerton.
The ultimate goal is replicating the Roman gastronomic experience — without the throng and buzz of tourists.
